You know how you have this great idea, and then all three of your kiddos get sick, you fall TWICE on your bum in two weeks and can't walk and then have an in-grown toenail removed? Yah, like that,

meat and potatoes- any kind, any sort
throw in a veggie and a fruit and you have a nice, complete, easily-GF meal for the whole family!

I am baking!
I am busy baking, just not blogging.
Here is a CC cookie recipe that turned out ok, it looked dry, but when more flour was added (Jeanne's mix) it just got thicker.
I am working on a new mix, and then a mini pie crust today.

Caramel Corn Cheesecake
I adapted this recipe from the Orville Redenbocker cookbook I found at DI.
Changes I would make:
get more caramelly- caramel corn
more sugar and fat in the crust - so it sticks together better and had more crunch.
No/way less sour cream - it doens't taste very cheese-cakey
Maybe put layer of caramel sauce on the bottom of the cheese cake.
My sweetie bought me a 6" springform pan - so I can make 1/2 batches of cakes, cheesecakes, etc and not waste so much pricy GF ingredients (also so we have less to eat!)
Will work on pie crusts next week.

How to not starve your family
I want to blog here about living with ONE person in your family with a gluten-free eating issue - but without starving the rest of the people you live with!
Example: serve everyone else regular oatmeal and you nuke your GF-very pricy-oats. Everything else is the same.
